Preparation Time15 mins

Serves

AmountIngredientPreparation
1 cup hummus
1 bunch fresh cilantro chopped
2 (or to taste) green chili chopped
1 red onion sliced
1 cucumber sliced
1 med/large container bean sprouts
1/3 cup roast red pepper
a couple leafs lettuce
1/2 cup goat cheese
a little bit olive oil

1. Combine hummus, chopped cilantro, chopped chilies, and a little bit of oil.

2. Build yourself a salad. Start with lettuce leaves, bean sprouts, slices of cucumber, red onion, roasted red pepper, a scoop of the hummus, and a sprinkle of goat cheese.

3. This can be easily turned into a sandwich or be eaten with crackers.

4. If you don't want to buy a roasted red peppers, buy a fresh one. Place the red pepper directly over the flame of a gas burner. The outside of the pepper should burn and turn black. Slowly rotate the pepper so that it's cooked evenly. When the entire outside is black, remove it from the flame and put it in a container with a lid. The steam inside the container will loosen the skin. After 15 mins, peel off the skin, but do NOT wash the pepper. Slice up the pepper and eat, or store in oil for later.
