Tomato and Onion Salad

Preparation Time

Serves4 to 6

AmountIngredientPreparation
1 small one, peeled and sliced very thinly red onion
6 ripe ones, sliced into thick wedges tomato
2 to 3 tsp dried oregano
really good quality extra virgin olive oil
a splash white wine vinegar
to taste sea salt
freshly ground, to taste ground black pepper

1. Gently layer everything together, seasoning with salt and pepper at you go. Drench with the olive oil and then add a tiny splash of the vinegar. Allow to sit for several hours before eating. Delicious!

We have a very similar salad in Lebanon, we use dried mint instead of oregano and we leave out the pepper.
