Tomato and Onion Salad

| Amount | Ingredient | Preparation |
|---|---|---|
| 1 small one, peeled and sliced very thinly | red onion | |
| 6 ripe ones, sliced into thick wedges | tomato | |
| 2 to 3 tsp | dried oregano | |
| really good quality | extra virgin olive oil | |
| a splash | white wine vinegar | |
| to taste | sea salt | |
| freshly ground, to taste | ground black pepper |
1. Gently layer everything together, seasoning with salt and pepper at you go. Drench with the olive oil and then add a tiny splash of the vinegar. Allow to sit for several hours before eating. Delicious!

How can you leave out cucumber?!
We have a very similar salad in Lebanon, we use dried mint instead of oregano and we leave out the pepper.
