Cole Slaw

Source Recipe curtosy of my fabulous roommate
Preparation Time15 minutes
Serves4 as a side
| Amount | Ingredient | Preparation |

| 1 | red cabbage | |
| 1 | red apple | |
| 2 stalks | celery | |
| 1 | onion | |
| 1/2 c | mayonnaise | |
| 3 T | cider vinegar | |
| 2 T | sugar | |
| 2 T | fresh parsley | |
| raisins | ||
| salt and pepper |
1. Chop the cabbage and apple coarsely and combine in a medium bowl
2. Finely chop the onion and the celery and add them to the bowl
3. Add the mayo, cider vinegar, sugar (if you prefer you do not need the entire two tablespoons), and parsley and mix well.
4. Stir in the raisins (or other mixed dried fruit) and add salt and pepper to taste.

This recipe came from my roommate, this is the only cole slaw that I have had that I have enjoyed. The apple and the raisins make it really refreshing.
I make a similar recipe but I use olive oil instead of mayo, and don't add sugar.
