Spiced Pumpkin Bread

Preparation Time1 hour 30 minutes

Serves2 loaves

4 tablespoons molasses
2 teaspoon ground cinnamon
3 eggs
3/4 cup vegetable oil
1/2 teaspoon salt
1/4 teaspoon baking powder
1 teaspoon baking soda
1.5 cups granulated sugar
1 cup all-purpose flour
1 cup whole wheat flour
3 cups grated pumpkin, fresh
1 teaspoon Vanilla Extract
1/2 teaspoon nutmeg
3/4 cup sunflower seeds

1. Mix all ingredients together in a large bowl. Pumpkin seeds, flax seeds, or oats may be substituted for the sunflower seeds.

2. Add batter to two oiled loaf pans and bake at 325 F in the oven until a toothpick inserted into the middle of the loaf comes out clean, just over an hour.
