For those of you that are not gluten-free, this recipe works best with two and one-half loaves of Jimmy John's day-old French bread. I kid you not, I've never found better bread to use.
For those that ARE gluten-free, one and a half loaves of my gluten-free bread, two days old is perfect for this recipe! If you know someone or buy your bread somewhere, you'll want a soft fluffy loaf that isn't crumbly in any way. If the loaf is really light, you'll probably have to use a bit more than the recipe calls for.
This recipe makes lots of pudding! The pictures are of a small batch using 2.5 cups of milk, 4 eggs and 1.75 loaves of JJ's bread.
I like to make most of my recipes easy to convert, so you can certainly substitue the whole milk for almond or soy.

| 4 cups | whole milk | You can substitue almond or soy milk if you like. I would add a tsp of corn starch and an extra egg yolk if you choose to go lactose-free. |
| 1 loaf | bread | Please read the intro! It tells you all you need to know about the right amount of the right kind of bread! |
| 1/2 tsp | ground clove | |
| 1 tsp | pumpkin pie spice or allspice | |
| 1 cup | fresh blueberries, cranberries, or sliced bananas | I think it's best with bananas. |
1. Preheat your oven to 375 F. In a large mixing bowl, whisk your eggs, then spices, milk, sugar, and vanilla in that order.
2. Tear your bread into small, bite-sized pieces. Using a large wooden spoon, slowly stir them into your milk/eggs/spices, etc.
3. Grease a medium glass baking pan. Place mixture in pan and drizzle the melted butter over it. Add fresh berries and turn over gently with a fork.
4. Bake for about 30 minutes or until a crispy, medium golden brown on top.
