Sun Dried Tomato and Sausage Risotto
Olivia and I came up with this recipe when we decided we didn't want to eat anymore noodles.

| Amount | Ingredient | Preparation |

| 2/3 cup | frozen peas | optional |
| 3 | large hot pork sausages | skinned and chopped |
| 5 cups | chicken broth | |
| 1 1/4 cup | arborio rice | |
| 3/4 teaspoon | dried cilantro | |
| 1/8 teaspoon | dried oregano | |
| 1 tablespoon | sun-dried tomatoes | chopped |
| 2 | fresh garlic cloves | diced |
| 1 | yellow onion | diced |
| 4 tablespoons | extra-virgin olive oil | |
| mozzarella cheese shredded | garnish | |
| 1/4 teaspoon | pepper |
1. Place onion, oil, and garlic in frying pan on medium heat until the onion is translucent.
2. Add sausage and cook until brown.
3. Add sun-dried tomatoes, cilantro, pepper, and oregano, and let steep.
4. Stir in rice until coated in oil.
5. Pour in a cup of chicken broth, and let the rice absorb it. Repeat until rice is tender.
6. Remove from heat, add mozzarella cheese and microwaved peas on top. Serve.
