Baked Cod or Salmon or Sea Bass with Caper Butter

| 2 lbs. | Fish (fresh cod, salmon, sea bass, other) | |
| 1 stick | butter | |
| 2 tbsp. | capers in brine | |
| handful | parsley | |
| one, cut in wedges | lemon |
1. Preheat oven to 350. Rinse and place fish in baking pan. Dab with squares of butter. Bake 20 minutes or until firm and flakes with a fork.
2. While fish is baking, melt one stick of butter in small sauce pan. Add capers and one tbsp. of brine. Simmer until butter clarifies.
3. Place cooked fish on platter. Pour caper butter across filet. Arrange parsley, lemon wedges, or other garnish.
