Blueberry Soda Bread

Preparation Time45 minutes


1 3/4 cups flour
6 tablespoons sugar
1/2 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
1 cup buttermilk
1 egg
1/2 cup melted butter
1 cup (frozen works) blueberries

1. Preheat oven to 350 degrees F. Combine and mix dry ingredients (flour, salt, sugar, baking powder, baking soda).

2. Melt butter, add buttermilk, add egg and whisk thoroughly. Mixture is halfway between a batter and a dough and sticky.

3. Combine wet and dry ingredients. Add blueberries.

4. Pour into greased cake pan. Make large deep X on top with knife. Bake for 25-30 minutes or until toothpick comes out clean. Soda bread will rise shaped by X and turn golden brown.
