Swedish Flat Fish Casserole

Preparation Time1 hour


2 lbs. filet of sole or other mild flat fish like tilapia
1 large (24 oz.) can whole stewed tomatoes
2 lbs. green beans
1/2 cup flour
1/2 cup (1 stick) butter
3 cups milk
1 cup parmesan or romano cheese
2 tsp. dried basil
to taste salt and pepper
2 tbsp. dried parsley
1 tsp. powdered garlic (optional)

1. Preheat oven to 350 degrees F. Boil water and parboil fresh green beans for 3 minutes or until crisp but cooked. If using frozen green beans, no parboiling is necessary.

2. Layer ingredients in casserole dish as follows: green beans, stewed tomatoes, basil, parsley, salt and pepper, garlic, and cover with layer of filet of sole.

3. In a saucepan, melt butter. Whisk in flour. Add milk and whisk until mixture thickens. Whisk in cheese until mixture is thick sauce. Add salt to taste.

4. Cover top of sole layer with cheese sauce. Bake in oven uncovered for 45 minutes or until sauce topping is golden brown and casserole is bubbling.

5. Serve over rice or pasta.
