Green Bean Salad

Preparation Time15 minutes


2 lbs. fresh green beans
1/2 lb. fresh snow peas
1 cup sunflower seeds
1/4 cup rice wine vinegar
1/4 cup olive oil
1 tsp. salt
1 tsp. dijon mustard
to taste fresh ground pepper

1. This dish can be made ahead and served at room temperature. Parboil green beans until just barely cooked and still crisp, usually 3-5 minutes. Parboil snow peas 1 minute.

2. Whisk together rice wine vinegar, olive oil, dijon mustard, and salt. Toss together with green beans and snow peas.

3. Just before serving, add sunflower seeds and fresh ground pepper and toss.
