| 2-3 T | toasted sesame oil | |
| 1 T or to taste | vinegar | |
| 1 1/2 T | toasted sesame seeds | |
| 3 | spring onions | |
| 16-20 leaves | fresh basil | |
| 16-20 leaves | Pak Chee Farang | aka Long Coriander, but does not taste like cilantro or corriander |
| 6 leaves | Choi Sum | you can substitue any mild/bitter lettuce |
| 1 large | carrot |
1. Prep: Peel the carrot and then make 8 or more long strips with your peeler. Wash all your greens. Cut your large Choi Sum or lettuce leaves in half for rolling. Slice each springs onion into fourths or thirds length-wise.
2. Assemble: Lay a large lettuce leaf on a flat surface. Place two leaves of Pak Chee Farang and two basil leaves as well as a slice of spring onion in the leaf. Roll up the leaf with everything inside and then wrap with a carrot. Put a toothpick through the each bundle to keep the wrap together.
3. Sesame dressing: Combine sesame oil, vinegar, sesame seeds, sugar, salt to taste for a delicious warm dressing.
These are absolutely delicious! They're good for a health appetizer, snack, or light meal. Enjoy!
