Chu Chee Fish

Serves4 people

whole fish bream fish
1 cup vegetable oil
1 teaspoon kaeng chu chee curry paste
6 leaves dried kaffir lime leaves
1 cup coconut milk
1 tablespoon fish sauce
1 teaspoon sugar
1 pepper fresh red chili pepper
to taste fresh cilantro

1. In a wok or large frying pan fry the fish using all but 1 tablespoon of the vegetable oil. Fry over high heat until golden on one side. This should take 5 minutes.

2. Using a pair of tongs carefully turn the fish.

3. Fry the other side of the fish on high heat until golden. Again it should take about 5 minutes.

4. Gently remove the fish from the wok.

5. Using the oil withheld earlier stir-fry the curry paste and lime leaves. This should be over medium low heat.

6. Add the cocounut milk and fish sauce and allow to simmer for about 5 minutes.

7. Add the sugar and simmer for another 5 minutes.

8. Place the fish on a serving platter, pour the sauce over it and garnish it with cilantro and chopped chili peppers.
