This is an old standby for me. Usually associated with Thanksgiving, I've found myself cooking it more and more often when trying to fill out a meals that need a flavorful addition. When done right it'll come out buttery and sweet. Have patience when caramelizing the onions, it's what gives the sweetness.
|1/4 cup||white wine|
|1 large||red onion||sliced|
1. Melt the butter over high heat.
2. Add the onions and mix them up to separate and thoroughly coat in the butter. Stir frequently, keep the heat on high and allow the onions to caramelize.
3. As the onions are beginning to caramelize, add the mushrooms. Mix the mushrooms into the onions thoroughly and allow to cook down. Cook them to taste, I like them fairly nuked.
4. Add the white wine and mix to wash the caramelized sugar off the pan. Allow to cook for a few minutes longer then remove from the heat and serve.
