|5 lbs.||Chicken fryer or roaster|
|2 tbsp.||olive oil|
1. Preheat oven to 450 degrees F. Rinse defrosted chicken. Rub inside cavity and outside skin with salt. Rub skin with olive oil.
2. Place chicken on rack in roasting pan. Place uncovered in oven. Roast at 450 for 30 minutes. Reduce heat to 400 and roast for 45 minutes or until skin is crispy gold and leg moves easily to the touch.
