Chicken Chow Mein

| 1+ lb chunked | chicken | |
| 2 cups diced | onion | |
| 2 cups diced | celery | |
| 2 cups | broth (chicken or veggie) | |
| 1 can | bean sprouts | |
| 1 small can, sliced | water chestnuts | |
| 1 T | sugar | |
| 2 T | soy sauce | |
| 2 T | corn starch | |
| to top (optional) | chow mein noodles |
1. Heat a little oil in a large frying pan. Add chicken.
2. When the outside of the chicken is just cooked add onion and celery and broth. Bring to a simmer.
3. Add bean sprouts, water chestnuts.
4. Add sugar and soy sauce.
5. Dissolve corn starch in a little cold water. Mix. Add corn starch water to frying pan. Continue to stir as the mixture simmers and thickens.
6. Serve over rice with chow mein noodles on top.
